A loaf of rye bread rubbed with garlic and seasoned with a pinch of salt resembles of my childhood. Bruschetta comes from Italian neorealism. Grill pieces of bread in a pan without butter or oil. Rub with garlic and drizzle with olive oil. The bruschetta can be filled with finely chopped tomatoes with basil and onions. Or, with something else: smoked salmon and a quail egg seasoned with spring onion, for example. Or, roast red peppers.
